Baby Potatoes

Baby potatoes are small, young tubers harvested early before they reach full maturity, giving them a delicate, tender skin that does not need peeling and a creamy, moist interior that is far more flavourful than large mature potatoes. Their small uniform size makes them perfect for whole roasting, pan-frying, and adding to curries and gravies without the need for cutting. When roasted with olive oil, herbs, and garlic, baby potatoes develop a crispy golden exterior with a fluffy interior that is irresistible. Grown in the fertile plains of Punjab, Uttar Pradesh, and Madhya Pradesh, these baby potatoes are harvested at 60–70 days of growth — approximately three weeks before full maturity. They are rich in complex carbohydrates, potassium, Vitamin C, and Vitamin B6. The edible skin of baby potatoes contains a significant concentration of nutrients and dietary fibre. They store well at room temperature for up to 7 days in a cool, dry, ventilated place. Avoid refrigerating as cold temperatures convert potato starch to sugar.
