Methi, or fenugreek leaves, are among the most flavourful and medicinally significant leafy vegetables in the Indian culinary tradition. The slightly bitter, aromatic leaves are a celebrated ingredient in methi saag, aloo methi, methi dal, and the beloved methi paratha — whole wheat flatbreads studded with fresh fenugreek that are a comfort food in Punjabi households. The distinctive bitterness of methi is due to the alkaloid trigonelline and the saponins present in the leaves, compounds that have been studied extensively for their ability to lower blood glucose levels, making methi an important dietary component for diabetics and pre-diabetics. The leaves are also a rich source of iron, calcium, potassium, and Vitamins A, C, and K. In Ayurveda, methi has been used for centuries as a galactagogue — a substance that promotes breast milk production in nursing mothers. The seeds are equally potent. These fresh methi leaves are sourced daily and delivered in compact bunches. The slight bitterness can be reduced by sprinkling with salt and resting for 15 minutes before washing and squeezing. Refrigerate and use within 2 days. Origin: Maharashtra and Rajasthan, India.
